I saw this delicious looking recipe on Pinterest and was excited to give it a try. The three cheese thing sounds amazing but I know that as much as I love cheese, I needed to add some form of veggie in there. I added fresh mushrooms and swapped the mozzarella for goat cheese. The cheese swap was simply a user error as I got the wrong cheese at the store but it turned out great. This is a good recipe to add to your must try list if you have the time!

Baked Blueberry French Toast.
Last weekend I needed to find a breakfast recipe that could supply enough tastiness for at least 11 people and I discovered a gem! I should tell you the majority of it needs to be prepared the night before, but the morning of your breakfast all you’ll need to do is pop it in the oven which is a plus!
What you’ll need:
2 medium sized loaves of french bread, 4 oz cream cheese, 1 cup and 1 tablespoon milk, 1/2 cup powdered sugar, 1 cup blueberries, 2 tsp vanilla extract, 5 eggs, 1/2 tsp cinnamon, 1/4 tsp nutmeg, and 1/4 maple syrup
(Slice the medium sized loaves of french bread into cubes)
(Spray a deep dish pan with baking spray and place half of the bread cubes in the pan)
(Mix cream cheese, 1 tb of milk, and powdered sugar together to form a thick mixture)
(Pour that mixture over the pan of bread crumbs and sprinkle the majority of your blueberries on top. Place the remaining bread crumbs on top of the blueberries)
(Whisk eggs, milk, vanilla, cinnamon, nutmeg and maple syrup together)
(Pour that mixture over the breadcrumbs and sprinkle more blueberries on top. Cover with foil and let that sit over night.)
(The next morning bake the french toast at 375 degress with the foil ON for 45 minutes. Remove the foil and bake for 30 additional minutes)
(Serve with either maple syrup or a blueberry simple syrup which can be made easily as well)
Looking back on it, I would have added a touch more cinnamon and nutmeg for a little extra kick. If you are looking for something that will go over well for a large group, this is a great recipe to try!
Zucchini Ribbon Pesto.
Interested in carb free pasta? Simple, just use zucchini! This is one of my favorite dishes because it is quick and fresh, it is also filling.
(Wash 5-6 zucchini’s which will make enough for about 4 people)
(Start peeling all of the zucchini with a mandolin or a basic vegetable peeler)
(You’ll fill a bowl pretty quickly)
(Add 2 teaspoons of olive oil or flavored olive oil to a large pot over low-medium heat)
(Mix up the zucchini- it will cook down fairly quickly)
(Add pesto to the mixture and cook for a few minutes longer until all warmed)
(If you want to add something extra, you can add in cooked chicken or in this case we used Trader Joe’s mushroom ravioli’s)
(Voila, you have a delicious dish)
All in all, this takes about 15 minutes to cook making it a great meal after a long day at work!
Protein Power Breakfast Hour
Lately, I have been reading more and more about eating a protein heavy diet filled with good fats in order to help build muscle and ward off the hungry feelings I get every few hours. I came up with this simple and tasty breakfast the other morning and it certainly has been keeping me full longer.
(What you’ll need: corn tortillas, avocado, eggs, tomato slices, and feta cheese)
(Step 2: Cook egg whites while tortillas are warming)
(Step 3: Sprinkle warm tortillas with feta cheese. Goat cheese would work great here too)
(Step 4: lay egg whites on top of feta to melt the cheese a bit)
(Step 5: Grill your tomato slices)
(Step 5 & 6: Place the tomato slices on top on the egg whites and then layer on avocado. Additional salsa is a good option as well)
All of these flavors together make a delicious breakfast or lunch for that matter. Give it a try and let us know what you think!
This simple breakfast recipe will give you the energy you need to power through your morning and make it to lunch without being a hungry grump! It only takes a few minutes and it is simply delicious!
(What you’ll need: almond or peanut butter, one banana, a slice of wheat bread, a handful of granola, and a spoonful of honey)
(Toast the wheat bread and spread the almond butter across the top. Sprinkle the granola to the top. This gives it a tasty crunch)
(Add slices banana pieces to the top)
(Drizzle the spoonful of honey)
The end result is so delicious and very filling! Also, it couldn’t be easier, it’s just fancy toast!
Lately I’ve been making more and more meals since I have moved into my new apartment. And about 75% of those meals have involved a slow cooker. Here’s a great and super simple recipe for a delicious vegetable yellow curry.
(What you need: coconut milk, garbanzo beans, curry powder, tofu, two cups of chopped vegetables, and cayenne pepper)
(Add in all of your chopped vegetables)
(Top with garbanzo beans and cubed tofu)
(Add in 28 oz. of coconut milk, 4 tablespoons of curry powder, and cayenne pepper to taste)
(Place the lid on your slow cooker, cook on high for 4 hours or low for 2. Serve over cooked rice or couscous)
This is the tastiest meal I have made in the slow cooker to date!
Homemade French Crepes.
This weekend I made one of the most delicious and easiest recipes for breakfast: French Crepes! Honestly, you probably have most of the ingredients in your pantry already so you should give it a try. And if I can do it, so can you!
(You will need: 1 cup of flour, 2 eggs, 2 tablespoons of melted butter, a half cup of milk, and a pinch of salt. The filling can consist of your favorite fruits and jams or my favorite, Nutella!)
(In a large bowl, whisk the flour and eggs together)
(Slowly whisk in the milk, a half cup of water, salt, and melted butter until you get a smooth consistency)
(Pour the batter in a lightly buttered pan over medium high heat in quarter cup increments. The thinner the pour, the better)
(After 2 minutes flip over your crepe and cook for another 30 seconds)
(Add Nutella or jam, and fruit of your choice)
(Fold in half and serve when warm)
You can also get creative for breakfast and scramble eggs with cheese and serve in your crepe. For dinner, I have made Pesto Parmesan Chicken crepes. It’s one of the simplest things to cook and it always impresses people because it looks fancier than it is. These crepes take literally 2 minutes and 30 seconds to cook, it doesn’t get better than that!
Pecan Brittle with Apricots
Apricots are one of my favorite foods and the only time we can eat them is during the Summer! This recipe for pecan brittle with apricots takes only 15 minutes and is so easy to make, it’s the perfect Summer treat! Just follow these simple instructions.
(Add one cup of sugar to a non-stick sauce pan)
(Spray your baking dish with oil and pour your brittle mix in. Sprinkle sea salt on top and score with a sharp knife)
(Once it cools, break into chunks and place in a cup with Greek yogurt and apricots)
It’s that easy and is really tasty!
Heart Beet Salad
It’s super important to fill your body with delicious and healthy food when you can. I love salads because I can mix and match whatever I want. Here is a simple salad that I made last night!
(Place uncooked beets in a baking dish with orange slices surrounding them. Sprinkle with olive oil, salt, and add one cup of water. Cook for 45 minutes at 400 degrees)
(Slice radishes will you wait for the beets to cook)
(Slice a citrus of your choice, I love oranges)
(Put it all on a bed of lettuce and add some goat cheese crumbles)
Make sure you dress with a vinagrette, I made a lime ginger basil which was super simple and very delicious!
PoP Tart My Heart!
I think you can tell by now that we love to bake and create delicious things. Problem is, I am a terrible baker so I need to be creative about how I make things. This recipe was told to me by my hair stylist, she is the ultimate baker. It is so easy and even more yummy, try it this weekend!
(Start by chopping up some of your favorite fruit or you could use a pre-made preserve)
(We laid out some of the Pillsbury croissant dough and layered the fruit mix on top of it)
(Place another piece of croissant dough on top and seal with the edge of a fork)
(Cook according to dough instructions. Immediately top with some frosting and sprinkles!)
Treat yourself to this simple and yummy treat! I must say they didn’t last long between the two of us!
