Perfect Pumpkin Pie.

IMG_6022With Thanksgiving coming up, I thought I’d share a recipe with you all for the perfect Pumpkin Pie.  My mom is from the mid-west and therefore she is a pie master.  However, this recipe came right from the can of pumpkin but is perfect because it’s not too sweet but it’s still extremely tasty.  Also, Chelsea and Lindsay got me this awesome pie pan and server from Anthropologie for my birthday so it was so fun to put it to use!

3/4 Cup Sugar
1/2 Tsp Salt
1 Tsp Cinnamon
1/2 Tsp Ginger
1/4 Tsp Cloves
2 Large Eggs
1 can pumpkin
1 can evaporated milk

Mix the above together and bake @ 425 degrees for 15 minutes then 350 degrees for 40-50 mins.  I used a pre-made pie crust but you can choose a crust of choice.

Baked Red Velvet Donuts.

I have an extreme love for donuts even though they make me feel bad after I eat too many, they are just so delicious.  A good friend of mine was moving and gave me a bunch of his baking goods from his kitchen.  One giveaway was a donut pan and a boxed mix (shocker, I’m a sucker for box mixes) and I’d say these turned out pretty good.  They tasted more like cake circles since they weren’t deep fried but there’s nothing wrong with that 🙂

The box mix was from Stonewall.  Be warned, this red dye is extremely strong.  I’ve been a huge advocate of natural lately so I feel like this goes against my grain but since they tasted pretty good, I thought I’d pass along the info.

European Chocolate.

Who doesn’t love chocolate?!  While Shannon and I were in Holland for a music festival we found a place that met every chocolate need we could have.  We only needed one of these little squares to fill up since they were so rich.  Of course we got different kinds and shared so we could taste the flavors.  Nothing makes me happier than trying new things and that includes chocolate!

My Oh My, Pie.

IMG_4880Now that Fall is here, there’s nothing like a good baked treat.  I get all my baking recipes from my mom.  She really knows how to bake up the good stuff so that not only does it taste delicious but your home will smell like a bakery for hours afterward.  Over the weekend she made this delicious apple pie and it was a great way to end the weekend.  IMG_4888

Summer Fiesta.

imageOne thing I was very excited to come back to was making my own meals (weird, I know).  I loved trying all the different foods when I was gone but every once and a while I would crave one of my own weird creations.  This one is a new zesty mix I came up with but find it so refreshing I wanted to share.  It’s easy and healthy!

What you need:

This may be the easiest thing to make but who cares, it’s delicious!

1. Cook the burger patty
2. Take one tortilla and spread the avocado evenly across it
3. Then add a few scoops of the Pico de Gallo on top of that
4.  Place the burger on top of the Pico de Gallo
5.  Add a few mushrooms on top of the patty before completing the sandwich with another tortilla

You can really add or subtract whatever ingredients you’d like here.  It’s very simple and I must say I’m addicted.  I feel like a kid again with a lunchable only this is much tastier and I’m actually ingesting some veggies in the meantime.

You’re Such a Lovely Cup

OK, since my last post I attributed to a song (“Sweater Weather” by Neighbourhood) I thought I’d give this one the appropriate “Lovely Cup” by Grouplove.  We are HUGE music lovers and always on the hunt for good music or listening to music we consider classics so feel free to share with us anytime!  Anyway, sorry I got distracted.  With Valentine’s Day coming up, it’s such a great ‘holiday’ to gorge on sweet treats and hang out with your friends and/or lover.  This is a perfect sweet treat to have or even possibly make with your friends/lover.  Cake in a cup – genius!

What you will need:

– Glass mugs
– Cake mix of your liking (with needed ingredients: eggs, vanilla, etc.)
– Fun sprinkles or toppings

I only made two cups so I didn’t need much cake mix at all.  Half a batch of cake mix from a box will be plenty for two mugs.

IMG_6858(While the oven is pre-heating, I greased the mugs and mixed up the cake batter)

IMG_6864(You can then place the mugs directly on the oven rack once the oven is pre-heated)

IMG_6872(I started the timer with about 20 minutes but kept checking back as they actually finished around 30 minutes.  It’s a trial and error depending on how much cake mix you used.  I tried to follow the instructions on the cake box for cupcakes though)

IMG_6877(I then added pretty/delicious sprinkles and a few marshmallows for some added sugar 😀  Valentine’s Day is worth splurging for)

IMG_6878Then, after you eat the cake, just fill up your mug with some coffee.  It’s perfection really.  It’s a great way to bribe people to spend some quality time with you.  I mean, I’d be sold!

Edible Fairy Wands

IMG_6451It’s every twenty something year olds dream to have these magical sweet treats!  Chels and I first discovered these at a fund raiser which was dangerous because if you know your money is going to a good cause why not buy hundreds of them and indulge??  After all, it is helping somebody else!  Anyway, anything dipped in chocolate is a gift from God.  I don’t know if you have noticed but we are all about simple fixes and these are a great treat that you can share with others.

What you will need:
– Long Stemmed Pretzels
– White Chocolate Chips
– Sprinkles and/or any other desired toppings (our favorite choices: mini-marshmallows, coconut flakes, sparkly sprinkles)

IMG_6356(First step: Gather all your ingredients and place chocolate chips in a heating pan on the stove.  I’ve heard you can use the microwave but then the chocolate would harden much faster so I wouldn’t suggest it.  You want to have the pretzels out and ready to dip though because once the chocolate is melted, it’s go time)

IMG_6361(BEWARE: We melted on heat level 1.  The chocolate chips must melt on a very low level, otherwise they don’t become a creamy consistency and will actually harden/burn.  Once the chocolate is melted, you must work quickly.  Keep the burner on though as you start dipping.)

IMG_6370(We learned that tilting the pan to the side allowed for more chocolate which is always a plus)

IMG_6371(Twirl the magic wand as you start to remove it from the melted chocolate.  This helps swivel off some of the extra chocolate and make the wand look much more consistent)

IMG_6366(Now here’s the fun part!  Sprinkle your little hearts out.  We sprinkled over the sink because this can be a tad messy)

IMG_6487Lay them out to dry and then serve them up!  We couldn’t help but sample them along the way, you know, to make sure they all tasted alright.

Hey, they can’t all come out perfect looking but don’t worry they won’t last long anyway.  The combination of salty sweet gets everyone addicted instantly and before you know it, all that’s left are scattered sprinkles like a fairy crime scene.

Delicious Dishes – Pumpkin Muffins!

Ask Chelsea, sometimes I bring a tupperware full of freshly baked cupcakes to the office and before I have even sat down she is standing behind me demanding to know what that delicious smell is. And the tupperware is air tight! I’m a little worried about her actually, she can eat her weight in cupcakes- I mean it isn’t pretty about 15 minutes later but she keeps doing it. I digress! My mom has always been a baker so she has shared her recipes and kitchen with me since I was a little girl.  Fall is my favorite time of the year for baking because the best spices start to appear in all kinds of delicious dishes.  With that being said, I thought I’d share one of my favorite recipes for pumpkin muffins and what I do to make them seasonally perfect!  Using this recipe, you’re sure to make lots of friends by bringing them these sweet treats- just don’t tell Chelsea because she doesn’t like to share or save any for others.


(I always bring all of the ingredients out first and put them away as I add them to the mixing bowl.  That way I remember what I’ve already added.)


(I usually add things to my liking so for this recipe I added about a teaspoon of Ginger spice, a bunch of raisins, and coconut.  Once you get comfortable baking, it’s fun to throw in flavors that will add that extra bit of delicious-ness.)


(I’ve started sprinkling coconut on my baked goods instead of frosting for a healthier alternative.  I love coconut and it adds the perfect texture and taste.  I like to use cute paper cups to share with friends but you can also bake without any of the cups in the pan just make sure to grease the pan first.)


(They come out golden and crisp but still soft in the center after 20 minutes.  They also fill your house with an amazing Fall aroma.)
