Lately I’ve been making more and more meals since I have moved into my new apartment. And about 75% of those meals have involved a slow cooker. Here’s a great and super simple recipe for a delicious vegetable yellow curry.
(What you need: coconut milk, garbanzo beans, curry powder, tofu, two cups of chopped vegetables, and cayenne pepper)
(Add in all of your chopped vegetables)
(Top with garbanzo beans and cubed tofu)
(Add in 28 oz. of coconut milk, 4 tablespoons of curry powder, and cayenne pepper to taste)
(Place the lid on your slow cooker, cook on high for 4 hours or low for 2. Serve over cooked rice or couscous)
This is the tastiest meal I have made in the slow cooker to date!
